Ingredients
- 500 g scallop meat (without coral)
- 4 tbsp Lemon juice
- 4 tbsp olive oil
- Salt
- Pepper
- 2 tbsp crème fraîche
- 4 tbsp heavy cream
- 1 tsp oyster sauce (Asian supermarket)
- 1 tbsp chives sprigs
- parsley leaves
Instructions

Place scallops in boiling salted water, remove from heat and let stand for 5 minutes. Then take them out and allow to cool.

Slice the scallops into thin rounds.

Mix lemon juice with olive oil, a pinch of salt and pepper and combine with the scallop slices.

Whisk crème fraîche, heavy cream and oyster sauce together until smooth; season with salt and pepper.

Arrange scallops decoratively in the center of plates, sprinkle with chives, add a drizzle of sauce and garnish with parsley before serving.
