Scallops in Puff Pastry Cups

Ingredients
- 1 pack filo pastry (Turkish specialty shop)
- 1 Tbsp clarified butter
- 12 scallops with caviar (roe), sourced from fish dealer
- 4 tbsp finely chopped parsley
- Salt
- Pepper (freshly ground)
- 20 g melted butter
- 200 g crème fraîche
- 1 lemon (juice included)

Preheat the oven to 200°C. Cut the filo pastry into 24 squares of about 7 x 7 cm and brush each with liquid butter. Place two squares offset on top of each other and set them in the greased depressions of a muffin tin. Bake in the oven for 5-8 minutes until golden brown, watching closely as they darken quickly.

Carefully remove the pastry cups from the pan and let them cool. Mix crème fraîche with lemon juice, 3 tbsp parsley, salt, and pepper; spoon a dollop into each cup.

Heat clarified butter in a skillet and sear the scallops on both sides until firm. Season with salt, pepper, and parsley, then place atop the crème fraîche in the cups. Arrange the pastry cups on a large plate and serve immediately.
