Ingredients
- 8 scallops (without roe, very fresh)
- 5 chives stalks
- 25 g black truffle (more or less to taste)
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt
- white pepper
Instructions

Rinse the scallops, pat dry and finely dice them. Wash the chives, shake dry and cut into fine ribbons.

Grate the truffle into thin slices and roughly chop about 3 slices. Mix the scallop and truffle cubes with the chives, lemon juice, and olive oil.

Season with salt and pepper, fill a small dish (about 7 cm) and serve on an appetizer plate. Garnish immediately with truffle slices.
