- 4 scallop double fillets (ready to cook, skinless)
- zest of 1 lemon
- Salt
- freshly ground pepper
- 60 g butter (for greasing and topping)
- 0.5 bunch Parsley
- 3 onions
- flour (for coating)
- 3 tbsp clarified butter

Preheat the oven to 180°C fan.

Wash, pat dry, salt and pepper the scallop fillets. Grease four large sheets of foil and arrange the fish on them. Drizzle with lemon juice, season, and top with parsley leaves and butter cubes. Fold the foil into parcels and bake in the preheated oven for about 25 minutes.

Peel the onions, slice into strips, coat in flour, and fry in a hot pan with clarified butter until golden brown. Drain on kitchen paper.

Remove the parcels from the oven, open them, distribute the onions over the scallops, and serve immediately.
