Ingredients
- 1 kg Savoy cabbage
- 2 onions
- 2 tbsp olive oil
- 1 l vegetable broth (instant)
- 2 red bell peppers
- 3 Garlic cloves
- 4 tbsp Sour cream
- 425 ml white beans (1 can)
- Salt
- ground pepper
- basil (for garnish)

Clean, wash and chop the savoy cabbage. Peel onions and cut into wedges. Heat olive oil. Sauté onions in it. Add cabbage, cook briefly. Pour in broth, simmer for 30 minutes.

Quarter the bell peppers, clean and rinse, dice a quarter small. Place remaining halves on a baking sheet skin side up. Grill well for 5 minutes until skin is dark brown. Peel the peppers.

Peel garlic. Blend peppers with garlic and sour cream. Season with salt and pepper. Add beans to soup, heat through and adjust seasoning. Serve Minestrone with a dollop of paprika cream and paprika cubes on top. Garnish with basil.
