Savoy Cabbage and Potato Soup

The Savoy cabbage and potato soup from Spoonsparrow warms you from the inside on cold days.
Ingredients
- 1 onion
- 1 Garlic clove
- 300 g waxy potatoes
- 400 g savoy cabbage
- 100 g Red lentils
- 1 tbsp Olive Oil
- 2 tbsp Tomato paste
- 800 ml vegetable broth
- 1 tbsp freshly chopped dill
- Salt
- Pepper

Peel and finely dice the onion and garlic. Peel, wash and cut the potatoes into pieces. Wash, trim and chop the savoy cabbage. Rinse and drain the lentils.

Sauté the onion with the garlic in hot oil until translucent. Briefly cook in the tomato paste, then pour in the broth. Add the potatoes, cabbage and lentils to the soup and simmer for about 15 minutes. Finally add the dill, season with salt and pepper, and serve.
