Savory Yeast Loaf with Poppy Seed and Sesame

Ingredients
- 350 g flour
- 0.5 tsp Salt
- 0.5 cube fresh yeast (about 21 g)
- 150 g cooked potatoes (from the day before)
- 2 tbsp olive oil
- flour (for the work surface)
- 1 tbsp poppy seeds
- 1 tbsp light sesame seeds
- 1 Egg white

Mix flour and salt in a bowl, press a well in the center, crumble the yeast into it and stir with 100 ml lukewarm water until smooth. Dust with a little flour on the edges and cover to rise in a warm place for about 15 minutes.

Peel the potatoes, press them through a potato masher and add them with the oil and another 50 ml lukewarm water to the pre‑mix; knead by hand or with an electric mixer until smooth and the dough lifts from the bowl. Add more flour or water if needed.

Knead the dough on a floured surface for about 10 minutes, return it to the bowl and cover for another 45 minutes.

Preheat the oven to 190 °C (375 °F) with upper and lower heat.

Knead the dough again on a floured surface, divide into three equal parts, shape each into a ~40 cm long strand and braid them together. Pinch the ends tightly, place the loaf on parchment paper on a baking sheet, cover and let rise for about 20 minutes.

Mix poppy seeds with sesame; brush the loaf with egg white, sprinkle with the seed mixture and bake in the preheated oven for about 40 minutes.

Remove, cool slightly and serve.
