Savory Vegetable Muffins for the Thermomix®

Hearty vegetable muffins made in the Thermomix are quick to bake and always a hit.
Ingredients
- 2 Spring Onions
- 1 red bell pepper
- 2 tbsp olive oil
- 10 g basil (0.5 bunch)
- 150 g Low-Fat Quark
- 60 ml Milk (1.5% fat)
- 1 egg
- Salt
- Pepper
- 30 g grated Emmental cheese (2 tbsp)
- 200 g spelt whole‑grain flour
- 2 tsp Baking powder
- 0.5 tsp Baking soda
Instructions

Line a muffin tin with paper cups.

Wash, trim and chop the spring onions, bell pepper and basil; add to the mixing bowl. Pulse 4 s at speed 5. Use the spatula to scrape all ingredients into the bowl.

Add olive oil and sauté for 2 min at 120 °C on speed 1. Transfer mixture to a separate bowl and let cool slightly. Rinse the mixing bowl.

Weigh quark, milk, egg, salt, pepper, cheese, flour, baking powder and baking soda into the mixing bowl; process 30 s at speed 3.5 until smooth. Add the vegetables, fold in with the spatula, then fill the paper cups. Bake in a preheated oven at 200 °C (fan 180 °C; gas: level 3) for about 30 minutes until golden brown.
