German Fried Dough Bites

These fried dough bites are quick to prepare because baking powder is used instead of yeast.
Ingredients
- 400 g wheat flour type 1050 (+2 tbsp for handling)
- 40 g raw cane sugar
- 3 tsp baking powder
- 1 pinch salt
- 30 g warm clarified butter
- 120 ml milk (3.5% fat)
- 300 ml plant-based frying oil
- 25 g powdered sugar from cane sugar
Instructions

Mix flour, sugar, baking powder and salt; add clarified butter, milk and 110 ml water and process with a hand mixer’s flat beaters into a smooth dough. Add more flour or liquid if needed. Let the dough rest for about 15 minutes.

On a floured work surface roll the dough to about 0.5 cm thickness and cut into small squares with a side length of 2 cm.

Heat oil in a pot to 170 °C and fry the dough pieces in the hot fat for 1–2 minutes until golden brown. Immediately pour some hot oil over the fried dough. Lift them out with a slotted spoon, drain on kitchen paper, let cool slightly and dust with powdered sugar before serving.
