Pulled Chicken in Salad Tacos from Spoonsparrow is perfect for healthy leftover meals.

Ingredients

  • 300 g cooked chicken breast fillet
  • 1 Carrot
  • 1 tomato
  • 1 Red Onion
  • Salt
  • Pepper
  • chili flakes
  • 200 g Greek yogurt
  • 1 tsp lemon juice
  • 2 stalks celery
  • 8 radicchio leaves
  • 2 stems Parsley

Instructions

    Shred the chicken breast with a fork. Peel, wash and grate the carrot. Wash the tomato and dice it into small cubes. Peel, halve and slice the onion into thin strips. Mix everything together and season with salt, pepper, and chili flakes.

    Whisk the yogurt with lemon juice and season with salt, pepper, and chili flakes. Clean, wash, and chop the celery. Rinse the radicchio leaves and parsley, pat dry; roughly chop the parsley.

    Distribute the chicken mixture onto the lettuce leaves, top with celery and parsley, and drizzle with the yogurt sauce.
