Savory Tiramisu with Beetroot and Goat Cheese

Ingredients

  • 200 g beetroot
  • 0.5 stick cinnamon
  • Salt
  • 0.25 tsp fennel seeds
  • 0.5 stick licorice root
  • 100 g plain yogurt
  • 250 g low-fat quark
  • 50 g crème fraîche
  • pepper (ground)
  • 1 splash Lemon juice
  • 200 g goat cheese (chunked)
  • 2 tbsp black sesame seeds

Instructions

    Wash the beetroot, place it in a small pot and cover with water. Add the cinnamon stick with fennel seeds, licorice root and ½ tsp salt. Bring everything to a boil. Simmer over medium heat for about 45 minutes until tender. Shock the beetroot in cold water, peel, dice, and blend finely with 3 tbsp of the cooking liquid.

    Whisk the puree with yogurt, quark, and crème fraîche; season with salt, pepper, and a splash of lemon juice. Dice the goat cheese into small cubes and layer it with the beetroot cream in glasses, starting with the cream and building about three layers. Sprinkle black sesame on top and serve.
