Savory Sourdough Pancakes

Savory sourdough pancakes from Spoonsparrow: Quick leftover cooking, healthy and delicious!

Ingredients

  • 300 g Rye Sourdough (fresh or leftover starter)
  • 1 pinch salt
  • 2 Spring Onions
  • 1 handful Herbs (e.g. Dill and Parsley)
  • 1 Red Onion
  • 0.25 Cucumber
  • 1 tsp Capers
  • 1 tbsp Olive Oil
  • 40 g Cream Cheese

Instructions

    If necessary, dilute the sourdough with a little water. Season with salt and mix well, set aside.

    Clean, wash and slice the spring onions. Wash, dry and roughly chop the herbs. Peel, halve and slice the onion. Wash and slice the cucumber. Roughly chop the capers.

    Heat ½ tbsp of oil in a pan. Fry half of the batter on both sides for about 2 minutes over medium heat. Process the remaining batter in the same way.

    Spread the sourdough pancakes with cream cheese, distribute toppings on top, season lightly with salt, fold and serve.
