Savory Potato Poppy Seed Cookies

Ingredients
- 1 kg firm boiling potatoes
- Salz
- 200 g Flour
- 100 g poppy seeds
- 2 Eggs
- 2 EL starch
- Pfeffer
- Muskat
- Mehl (for the work surface)
- 1 egg yolk
- Mohn (to sprinkle)
- sea salt (to sprinkle)

Preheat the oven to 180°C with top and bottom heat.

Wash, peel, and boil the potatoes in salted water for 20-25 minutes. Drain and press through a potato masher. Let cool and mix with flour, poppy seeds, eggs, and starch. Season with pepper, salt, and nutmeg. Knead the dough on a floured surface and add more flour if necessary (the dough should not stick). Divide the dough into 3 pieces and roll each piece without flour between two sheets of cling film to about 3 mm thickness. Cut various shapes from the dough using a cookie cutter as desired. Whisk the egg yolk with 2-3 EL water and brush the cookies with it. Sprinkle with poppy seeds or sea salt and bake in the preheated oven for 10-15 minutes until golden yellow.
