Sesame Potato Croquettes

Ingredients
- 1 kg starchy potatoes
- Salt
- 2 tbsp melted butter
- 3 egg yolks (from large eggs)
- 1 tbsp flour
- ground pepper
- freshly grated nutmeg
- 2 Garlic cloves
- 0.5 bunch coriander leaves
- 5 tbsp sesame seeds
- clarified butter (for frying)
Instructions

Peel, wash and cut the potatoes into pieces. Boil in salted water for about 25 minutes until soft. Peel the garlic and crush it with a press. Wash the coriander, shake dry, pluck the leaves from stems and finely chop.

1) Drain the potatoes and let them steam off a little.

2) While still warm, mash the potatoes through a potato masher and immediately mix in butter, egg yolks, flour, salt, pepper and nutmeg.

3) Add the garlic and coriander and quickly knead into a dough. The mixture should hold together well; if too wet or dry, add more egg yolk or flour as needed.

4) Shape short, thumb-thick croquettes from the dough.

5) Toss the croquettes in sesame seeds.

6) Fry them in hot clarified butter until golden all around.
