Chickpea Balls with Yogurt Sauce

- 250 g chickpeas
- 1 clove garlic
- 1 onion
- 2 tbsp white bread crumbs
- 1 tbsp freshly chopped parsley
- 1 sprig coriander
- olive oil

- lettuce leaves
- 1 cup yogurt
- 0.5 lemon (juice)
- 1 tbsp sesame paste
- 1 tbsp chopped parsley
- 2 Tomatoes
- Salt
- Pepper
- Cayenne pepper

Soak chickpeas overnight in cold water, then drain. Peel and chop onion and garlic, add to the bowl.

Process everything through a meat grinder. Mix with chopped coriander, a bit of olive oil, parsley, and breadcrumbs. Season with cumin, salt, pepper, and coriander. Shape small balls, flatten slightly, and bake in hot fat until they float. Remove, drain, and pat dry on kitchen paper.

For the sauce, whisk yogurt with sesame paste, then season with lemon juice, salt, cayenne pepper, and pepper. Quarter tomatoes, remove seeds, dice finely, and stir into the sauce along with parsley.

Arrange chickpea croquettes on lettuce leaves and serve with the yogurt sauce.
