Ingredients
- 3 eggs
- 2 tsp Rapeseed Oil
- 325 ml milk (3.5% fat)
- 125 g spelt whole‑grain flour
- Salt
- 0.5 bunch mixed herbs (10 g; e.g., parsley, thyme, chives)
- 2.5 small organic oranges
- 1 tbsp Maple Syrup
- 2 tbsp olive oil
- Pepper
- 200 g lamb’s lettuce
- 2 Selles‑sur‑Cher AOP or other French goat soft cheese
Instructions

Whisk eggs, 1 tbsp oil and milk until frothy. Add flour and a pinch of salt; stir until smooth. Wash herbs, shake dry and finely chop. Fold into the batter and let rest.

Squeeze juice from half an orange. Peel remaining oranges and cut out segments, catching their juice as well. Combine all orange juice with maple syrup and olive oil, season with salt and pepper. Rinse, wash and spin-dry lamb’s lettuce.
