Ingredients
- 400 g penne
- Salting water
- 3 tbsp butter
- 2 tbsp flour
- 200 ml whipping cream
- 100 ml dry white wine
- 150 ml lobster stock
- 150 g mixed grated hard cheese (e.g., cheddar, Emmental and parmesan)
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- 2 lobsters (cooked and extracted)
- butter (for the pan)
- 2 tbsp bread crumbs

Preheat the oven to 200°C with both top and bottom heat.

Cook the Penne in salted water until al dente. Drain and set aside. In a hot pot, add 2 tbsp butter and let it foam. Stir in flour and gradually pour in cream while stirring. Continue stirring and add wine and stock; keep whisking until creamy. If needed, add more stock. Then stir in cheese gradually. Season with salt, pepper, and nutmeg. Mix in the Penne and chopped lobster meat. Transfer to a buttered baking dish.

Brown Panko crumbs in the remaining hot butter until golden brown. Sprinkle over the pasta and bake in the oven for about 20 minutes.
