Savory Olive Cake

Ingredients
- 200 g green olives (pitted)
- 200 g black olives (pitted)
- 500 g flour
- 2 pinch salt
- 250 g grated Gruyère cheese
- 8 eggs
- 1 packet baking powder
- 2 tsp Baking soda
- 200 ml olive oil
- 200 ml dry white wine
- oil (for greasing the pans)
Instructions

Separate the eggs; beat the whites with salt into stiff peaks. Beat the yolks with the wine until frothy. Gradually whisk in the olive oil, continuing to beat.

Mix the baking powder and soda with the flour, then fold alternately with the egg white mixture. Divide the dough into two parts, folding black olives into one and green olives into the other.

Fill the dough into a greased or parchment-lined loaf pan. Sprinkle grated cheese on top.

Bake in a preheated oven with convection at 180 °C, or conventional heat at 200 °C, for about 50‑60 minutes until golden‑brown (cover with foil if needed). Check doneness and extend time if necessary).
