Savory Muffins with Olives and Feta

Savory muffins with olives and feta from Spoonsparrow are always delicious.

Ingredients

  • 150 g feta cheese (45% fat in cream)
  • 50 g black olives (pitted)
  • 4 tbsp pine nuts
  • 300 g spelt flour type 1050
  • 0.5 tsp Salt
  • 3 tsp baking powder
  • 5 tbsp olive oil
  • 300 ml milk (3.5% fat)
  • 1 tsp Dried oregano
  • 1 egg

Instructions

    Line a 12‑cup muffin tin with paper liners. Cut the feta into small cubes. Drain the olives and finely chop them along with the pine nuts.

    In a mixing bowl whisk together the olive oil, olives, pine nuts, milk, oregano, and egg. Quickly stir in the flour mixture and half of the feta.

    Fill the cups with batter. Sprinkle the remaining feta on top. Bake in a preheated oven at 200°C (fan‑forced 180°C; gas: level 3) for about 20 minutes until golden brown.
