Savory Fitness Bites with Skyr and Tomato Salsa
Hearty fitness bites made with skyr and tomato salsa: try this refined combination!
Ingredients
- 30 g Sesame seeds
- 50 g parmesan cheese
- 400 g Exquisa mild natural Skyr
- 3 tbsp rolled oats
- 6 tomatoes
- 1 Organic lemon
- 2 tbsp olive oil
- 1 bunch chervil
- 1 bunch dill
- 5 stems oregano
- Salt
- Pepper

Roast the sesame seeds in a dry pan until golden brown, remove and let cool on a plate. Meanwhile grate the Parmesan. Whisk the mild Skyr until smooth, then mix in the grated Parmesan, roasted sesame, and rolled oats. Season with salt and pepper, cover, and chill for about 15 minutes.

For the salsa, wash the lemon, pat dry, and zest it. Squeeze half of the lemon to get juice. Wash, core, quarter, and dice the tomatoes. Combine tomato cubes, lemon zest, lemon juice, and olive oil in a bowl. Season with salt and pepper.

Wash the herbs and shake off excess water. Strip leaves from the stems, chop them finely except for a few chervil sprigs reserved for garnish, then mix all herbs together.

Using two teaspoons, shape the chilled Skyr mixture into small balls. Roll each ball gently in the chopped herb mixture to coat.

Arrange the skyr balls and tomato salsa on plates, garnish with remaining chervil leaves, and serve immediately.
