Octopus Salad

Ingredients

  • 600 g octopus
  • 0.13 l vinegar
  • 4 cloves garlic
  • 4 tbsp Lemon juice
  • 1 tsp grated lemon zest
  • 6 tbsp Olive oil
  • Salt
  • ground pepper

Instructions

    Wash the octopus, bring to a boil in 2 L water with vinegar and 1 tbsp salt in a pot. Simmer covered on low heat for about 1 hour. Test doneness with a fork. Then rinse and drain.

    Peel and finely chop the garlic. Mix garlic with lemon juice, zest, salt, pepper, then whisk in the oil.

    Cut the octopus into bite‑sized pieces and toss with the dressing. Let marinate for at least 2 hours, taste again, and serve.
