Savory Filo Pie with Quark and Tomatoes

Ingredients
- 250 g filo dough
- 2 tbsp olive oil
- 2 handfuls fresh herbs (thyme, parsley and basil)
- 1 Garlic clove
- 100 ml whipping cream
- 3 eggs
- 100 g grated cheese (e.g., Gouda)
- 250 g quark
- Salt
- Pepper (freshly ground)
- 200 g Cherry tomatoes

Preheat the oven to 180°C fan.

Brush a pie tin with oil and line it with overlapping layers of filo dough, brushing each layer with oil as well.

Rinse the herbs, shake dry and pick out stems. Set aside some thyme leaves for garnish. Blend the remaining herbs with the peeled garlic clove and cream until smooth. Add the herb‑cream to the eggs and half the cheese, then fold in the quark; mix well. Season with salt and pepper, pour into the tin and spread evenly.

Wash, clean and halve the tomatoes. Place them cut side up on the custard, sprinkle with remaining cheese and thyme. Bake for about 40 minutes until golden brown.
