Savory Tart with Onions, Mushrooms and Sausage

Ingredients
- 250 g flour
- 0.5 tsp Salt
- 1 egg
- 160 g butter
- 250 g Cabanossi sausage
- 200 g mushrooms
- olive oil
- black pepper (freshly ground)
- 3 eggs
- 200 g crème fraîche
- 150 ml whipping cream
- Nutmeg (freshly grated)
- 6 red onions
- 1 tsp fresh chopped thyme
- 1 tbsp chives

Mix the flour with the salt, sift onto a work surface, create a well in the center, crack the egg into it and scatter the butter around the well. Quickly combine all ingredients by hand into a smooth dough, shape into a ball, wrap in cling film and refrigerate for 30 minutes.

Preheat the oven to 190°C (375°F) with both top and bottom heat.

Peel the sausage and slice thinly. Clean the mushrooms and slice them as well. Peel the onions and halve them lengthwise.

In a hot pan with 1 tbsp oil, lightly brown the sausage, add the mushrooms and cook until golden brown while stirring occasionally. Remove from heat, let cool, and season with salt and pepper.

Whisk the eggs with the crème fraîche and cream, seasoning with salt, pepper and a pinch of nutmeg.

Roll out the dough on a floured surface slightly larger than the tart pan, line the buttered pan with it, lifting up a rim. Spread the egg mixture over the base, arrange the onion halves cut side up on top, distribute the mushroom‑sausage mix in between. Sprinkle thyme and chives over the filling and bake in the preheated oven for about 35 minutes.
