Savory Feta and Eggplant Cake

Ingredients
- 3 cloves garlic
- 2 Handfuls Basil
- 70 ml Olive oil
- Salt
- Pepper (freshly ground)
- 1 small eggplant
- 200 g feta
- 200 g Flour
- 3 tsp baking powder
- 3 eggs
- 100 ml whipping cream
- butter (for the pan)

Preheat the oven to 160 °C fan. Peel and halve the garlic. Wash and dry the basil, then shake off excess water. Blend the garlic and basil with 50 ml olive oil in a blender to make pesto; season with salt and pepper.

Wash, peel, and dice the eggplant. Heat 2 Tbsp olive oil in a pan and sauté the diced eggplant, turning occasionally for about 10 minutes until lightly browned. Remove from heat and let cool. Cube the feta.

Whisk together flour and baking powder, then add eggs, cream, and remaining olive oil to form a smooth batter. Fold in the cooked eggplant, feta cubes, and pesto; pour into a buttered loaf pan. Bake in the preheated oven for about 45 minutes or until a skewer comes out clean.
