Ingredients
- soft butter (for the ramekins)
- 1 Zucchini
- 300 ml skim milk
- 2 Eggs
- 100 g low-fat quark
- 2 tbsp flour
- Salt
- Pepper

Preheat oven to 200°C with fan and top heat. Butter four small soufflé tins.

Wash, trim, and slice zucchini into very thin rounds or shave. Whisk milk with eggs, quark, and flour. Season with salt and pepper. Distribute zucchini slices in the tins and fill with the mixture.

Bake in preheated oven for 20–25 minutes until golden brown and serve warm.
