Sautéed Pork Fillet with Beans
A fresh bean dish featuring pork fillet and mushrooms, a delightful recipe from Spoonsparrow!
Ingredients
- 500 g princess beans
- 400 g pork fillet
- 125 g mushrooms
- 1 onion
- 3 Tbsp finely chopped basil
- Salt
- Pepper (freshly ground)
- 3 tbsp clarified butter
- 200 g heavy cream
- 1 tsp grated lemon zest
- Lemon juice
- basil for garnish
Instructions

Wash, trim and cut off the ends of the beans.

Clean the mushrooms and slice them.

Cut the pork across the grain into slices, then into strips.

Peel and chop the onion.

Cook the beans in heavily salted boiling water for 10 minutes, drain and shock with ice-cold water, then let drain.

Sauté the mushrooms in 1 tbsp hot clarified butter briefly and strongly, season, and drizzle with a little lemon juice before removing from the pan.

Sauté the onion in 1 tbsp clarified butter, add cream, season, simmer for about 2 minutes, then add basil strips and beans, letting them mingle in the cream.

Brown the pork in the remaining clarified butter over medium heat for 4 minutes, season, stir in 2 tbsp water, lemon zest, and lemon juice. Serve the pork with the creamy bean mixture, sprinkle sautéed mushroom slices on top, and garnish with fresh basil leaves.
