Sausages with Potato-Leek Vegetables

Ingredients
- 800 g leek
- 1 onion
- 30 g Butter
- 150 ml white wine
- 100 ml broth
- Salt
- Pepper
- Nutmeg (freshly grated)
- 1 tbsp flour
- 200 ml milk
- 500 g potatoes (cooked)
- brühwurst (as desired)
- saucisson vaudois
- leberwurst
- kohlwurst
- parsley
- roasted onions (ready-made)
Instructions

Wash the leek thoroughly, remove root ends and leaf tips, slice into 1 cm thick rounds.

Peel and finely chop the onion, sauté in half the butter without browning. Add the leek and stir for 2 to 3 minutes. Season with salt and pepper, pour in white wine and broth, cover and simmer for about 10-15 minutes.

Dice the potatoes, add them, and continue cooking for 10 minutes.

Cook the sausages in a separate pot of salted water with pepper for about 20 minutes (they can also be cooked in the leek mixture if desired).

Warm the remaining butter in another pan.

Pour the leek mixture through a sieve to catch the liquid. Add the vegetables back to the pan, dust with flour, stir, sauté for 2 to 3 minutes, then add milk and about 300 ml of the leek broth. Mix well and season with salt, pepper, and nutmeg.
