Sausage Tomato Pot with Beans

Ingredients

  • 1 onion
  • 1 Garlic clove
  • 75 g smoked pork belly (sliced)
  • 600 g Vienna sausages
  • 300 g white beans (canned)
  • 200 g kidney beans (canned)
  • 2 tbsp dried pickled tomatoes (in oil)
  • 100 ml dry red wine
  • 400 g diced tomatoes (canned)
  • 300 ml meat broth
  • 1 tsp fresh chopped thyme
  • 1 tsp fresh chopped oregano
  • 1 bay leaf
  • 2 peppercorns
  • Salt
  • ground black pepper

Instructions

    Peel and finely chop the onion and garlic. Slice the pork belly into thin strips. Cut the sausages into thin slices. Rinse the beans under running water and drain well. Drain the dried tomatoes and cut them into thin strips.

    Heat 2 tbsp tomato oil in a pot, then sauté the onion and garlic until translucent. Add the pork belly and sausage slices, cook briefly, then stir in the dried tomatoes. Deglaze with red wine, add diced tomatoes and broth, mix in herbs and spices, season with salt and pepper, and simmer over medium heat for about 15 minutes. Add the beans and continue to simmer for another 10 minutes on medium heat. Remove the bay leaf, taste the stew, and serve sprinkled with parsley.
