Barley Pumpkin Stew

Ingredients
- 2 EL Butter
- 500 g pumpkin flesh
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 2 stalks celery
- 2 EL tomato paste
- 120 g pearl barley
- 1 vegetable broth
- 1 EL fruit vinegar
- 1 pinch freshly grated nutmeg
- dill sprigs
- Salt
- Pepper
Instructions

Dice the pumpkin flesh finely. Wash the bell peppers, remove stems and seeds, cut into thin strips then into small diamonds. Wash the celery and finely chop.

Heat butter in a tall pot. Add the chopped vegetables and tomato paste and sauté for 3 minutes.

Pour in hot vegetable broth, sprinkle in the barley. Bring to a boil, reduce heat. Simmer for about 25 minutes until the barley and vegetables are tender.

Season with salt, pepper, and a pinch of nutmeg. Stir in fruit vinegar. Garnish with dill sprigs and serve.
