Sausage Salad with Cheese, Radishes and Onions

A fresh sausage salad with cheese, radishes and onions featuring crisp vegetables and creamy cheese slices from Spoonsparrow.

Ingredients

  • 200 g sliced cheese (Edam or Gouda)
  • 2 small red onions
  • 150 g radishes
  • 70 g daikon radish
  • 125 ml lukewarm meat broth
  • 1 tsp sharp mustard
  • 2 tbsp fruit vinegar
  • 2 tbsp chopped chives
  • Salt
  • pepper (ground)
  • a pinch of sugar
  • 4 tbsp germ oil
  • 600 g sliced Lyoner sausage

Instructions

    Cut the cheese into bite‑size pieces or strips. Peel and slice the onions into thin rings. Wash, trim and finely shave the radishes. Peel the daikon radish and grate it finely on a kitchen shredder.

    Whisk together the broth, mustard, vinegar, chives, salt, pepper and sugar for the dressing. Stir in the oil. Slice the Lyoner sausage finely and combine with the prepared salad ingredients under the sauce. Let it marinate for at least 30 minutes.

    Serve with fresh pretzel dough or crackers.
