Ingredients

  • 1 onion
  • 20 g clarified butter
  • 600 g sauerkraut (canned)
  • 100 ml Vegetable broth
  • 100 ml dry white wine
  • Salt
  • 1 tsp crushed caraway seeds
  • 1 bay leaf
  • 2 juniper berries
  • 4 Weißwurst sausages
  • 4 pretzel sticks
  • parsley (for garnish)
  • 4 pretzels (for garnish)
  • sweet mustard (optional)

Instructions

    Peel and finely dice the onion, then sauté it in a pot with the clarified butter. Add the sauerkraut, pour in vegetable broth and white wine, and season with salt.

    Add the caraway seeds, bay leaf, and juniper berries to a spice bag and simmer over low heat for about half an hour. Warm the Weißwurst sausages in a pot of water for 5 minutes, remove them, strip off the casings, and slice into rounds.

    Thread three sausage slices onto each pretzel stick. Arrange the sauerkraut in glasses, garnish with parsley, and place the pretzel sticks with sausage pieces on top. Serve with pretzels and sweet mustard as desired.
