Ingredients

  • 300 g fresh sauerkraut
  • 2 stalks chicory (20 beautiful leaves)
  • 1 tbsp White Wine Vinegar
  • 3 Tbsp plant oil
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp chives
  • paprika powder (for dusting)

Instructions

    Loosen the sauerkraut in a bowl with two forks and add the chives.

    Split the chicory into leaves.

  3. 3.

    Whisk together vinegar, oil, salt, and pepper to make a dressing, then toss the salad with it and refrigerate for 10 minutes.

    When serving, place a spoonful of sauerkraut salad on each chicory leaf and arrange on a plate. Dust with paprika and grind some pepper over it.
