Ingredients

  • 800 g pre-cooked firm potatoes
  • salt, pepper
  • 150 g instant vegetable broth
  • 250 g sauerkraut
  • 150 g fresh pineapple
  • 1 bunch spring onions
  • 100 g salad mayonnaise
  • 150 g yogurt
  • 3 tbsp curry powder
  • 400 g Salmon fillet
  • Lemon juice
  • 2 tbsp oil

Instructions

    Wash potatoes and boil in salted water with skins on for 20-25 minutes. Drain, peel, and slice into rounds. Bring broth to a boil and pour over the potatoes. Let steep for about 30 minutes.

    Drain sauerkraut on a sieve. Cut pineapple into pieces. Trim spring onions, rinse, and slice into rings. Whisk mayonnaise with yogurt. Season with salt, pepper, and curry powder.

    Cut salmon fillet into portions, drizzle with lemon juice, and season with salt and pepper. Heat oil in a non-stick pan. Sear salmon fillets on both sides for 2-3 minutes. Mix sauerkraut, pineapple, spring onions, and salad sauce. Taste again and plate together with the salmon.
