Ingredients

  • 500 g starchy potatoes
  • Salt
  • 120 ml milk
  • 1 tbsp butter
  • nutmeg
  • 800 g fresh sauerkraut
  • butter (for baking dish)
  • 200 ml heavy cream (at least 30% fat)
  • 1 egg
  • 1 tbsp freshly chopped parsley
  • pepper (ground)
  • 100 g smoked pork
  • 50 g grated Emmental cheese

Instructions

    Peel, wash, and boil the potatoes in salted water for about 30 minutes until tender. Preheat the oven to 180°C fan.

    Drain the potatoes, let them steam dry, then press while still hot. Heat milk and butter together in a pot; gradually stir into the potato mash with a wooden spoon. Season the mash with salt and nutmeg.

    Place the drained sauerkraut in a greased baking dish. Whisk cream, egg, and parsley together, season with pepper, and pour over the sauerkraut. Spread the mashed potatoes on top. Slice the smoked pork into strips and distribute over the mash. Sprinkle grated cheese on top and bake for about 30 minutes. Remove from oven and serve immediately.
