Ingredients

  • 250 g chicken bacon (boneless)
  • 250 g cooked potatoes (from the day before)
  • 2 tbsp butter
  • Salt
  • Pepper (freshly ground)
  • 400 g sauerkraut (pre-cooked)
  • 200 g Sour Cream
  • 100 g heavy cream
  • 3 eggs
  • 75 g grated cheese (e.g., Bergkäse)
  • Nutmeg (freshly grated)
  • 1 apple
  • parsley

Instructions

  1. 1.

Preheat the oven to 180°C fan. Dice the chicken bacon into small cubes. Peel and cut the potatoes into 2 cm cubes. Quickly brown the bacon in hot butter, add the potatoes, season with salt and pepper, and transfer to a baking dish.

  2. 2.

Drain the sauerkraut and spread it over the bacon-potato mixture. Whisk together half of the sour cream with the heavy cream, two eggs, and one third of the cheese. Season with salt, pepper, and nutmeg, then pour this mixture over the sauerkraut layer.

  3. 3.

Wash the apple, remove the core, and slice the flesh. Place the apple slices on top of the sauerkraut. Whisk the remaining sour cream with an egg, season, and spoon it over the casserole. Sprinkle the rest of the cheese and scatter parsley leaves on top. Bake in the preheated oven for about 45 minutes until golden brown.
