Ingredients
- 60 g raisins
- 100 g roasted pine nuts
- 1 kg fresh sardines (deboneed, filleted)
- Salt
- Pepper
- 8 tbsp olive oil
- 1 orange (unpeeled)
- 3 tbsp breadcrumbs
- 2 Bay leaves
Instructions

Soak the raisins in warm water.

Rinse the sardine fillets under cold water and pat dry. Season with salt and pepper.

Drain the raisins and mix well with the pine nuts.

Place a spoonful of the mixture on each sardine, roll tightly, and arrange them snugly in an olive oil‑lined baking dish.

Wash and dry the orange; grate its zest thinly, then squeeze the juice. Mix and evenly spread over the sardines.

Insert bay leaves between the rolled sardines and drizzle with the remaining olive oil. Bake at 180°C for about 20 minutes.
