Sardines in Orange Raisin Sauce

Ingredients

  • 100 g raisins
  • 1 kg sardines (from the fishmonger, gutted, filleted)
  • Salt
  • Pepper
  • 8 tbsp olive oil
  • 2 oranges (unprocessed)
  • 150 g pine nuts
  • 6 tbsp breadcrumbs

Instructions

    Soak the raisins in warm water. Rinse the sardine fillets under cold water and pat dry. Season with salt and pepper and arrange tightly in a baking dish greased with olive oil. Wash and dry the oranges, grate the zest thinly, then squeeze out the juice. Mix and evenly spread half of it over the sardines. Drain the raisins and let them drip off, then sprinkle pine nuts over the sardines. Sprinkle everything with breadcrumbs and drizzle with the remaining oil. Bake at 180°C in a preheated oven for about 20 minutes.
