Grilled Sardines with Couscous Salad

Spoonsparrow grilled sardines with couscous salad are a delightful treat from Mediterranean cuisine.

Ingredients

  • 300 g Couscous
  • 600 ml Vegetable Broth
  • 4 tomatoes
  • 0.5 cucumber
  • 3 spring onions
  • 1 lemon (juice)
  • 4 tbsp olive oil
  • Salt
  • Pepper
  • 800 g sardines (16 ready‑to‑eat sardines)
  • 4 stalks coriander

Instructions

    Place couscous in a bowl, pour boiling broth over it, cover and let stand for 10 minutes.

    Meanwhile, peel, wash and dice tomatoes. Peel, wash and dice cucumber halves. Peel, wash spring onions and cut into rings.

    Add half the lemon juice and 2 tbsp olive oil to the couscous and mix lightly. Fold in tomatoes, spring onions and cucumber, season with salt and pepper.

    Rinse sardines, pat dry and make 3–4 shallow slits on each side. Season with salt and pepper, drizzle with remaining oil. Grill on a hot grill or grill pan for 4–5 minutes per side over high heat.

    For serving wash coriander, pat dry, strip leaves. Arrange fish and salad on plates, drizzle with remaining lemon juice and garnish with coriander leaves.
