Sardine Tart

Ingredients

  • 300 g flour
  • 1 tsp salt
  • 1 egg
  • 125 g butter (cold)
  • 250 g canned oil sardines (drained weight)
  • 3 tbsp Lemon juice
  • Salt
  • pepper (ground)
  • 2 shallots
  • 1 tsp butter
  • 250 g whipping cream
  • 2 Eggs
  • lemon wedges (for garnish)

Instructions

    Place the flour on a work surface, make a well and add salt, egg and 3 tbsp ice‑cold water. Distribute butter in small pieces around the edge and cut everything through with a knife. Knead the dough quickly and cover it for at least 1 hour in the refrigerator.

    Preheat the oven to 200 °C (top/bottom heat). In the meantime drain the canned sardines. Peel and finely chop the shallots, sauté them in butter, deglaze with lemon juice and season with salt and pepper. Whisk together the cream and eggs. Take the dough out of the fridge, roll it into a circle, line a tart pan with a well‑lined rim. Mix the egg‑cream mixture with the shallots and spread it on the base. Arrange the drained sardines on top and season again with pepper. Bake the tart at 180 °C in fan mode for 30 minutes. Serve hot garnished with lemon wedges.
