Ingredients

  • 500 g frozen sardine fillets
  • 2 cans cooked chickpeas
  • 1 ripe Avocado
  • 2 tbsp chopped parsley
  • 2 tbsp chopped basil
  • 1 mozzarella ball (cut into small cubes)
  • 4 tomatoes
  • 1 Red Onion
  • 1 tbsp capers
  • 4 cooked sweet potatoes
  • olive oil
  • apple cider vinegar
  • Salt
  • ground pepper

Instructions

    Let sardine fillets thaw and pat dry. Season with salt and pepper. Drain chickpeas. Peel avocado, remove pit, dice. Peel onion, dice. Peel sweet potatoes, dice. Rinse capers, pat dry. Mix sweet potatoes, avocado, onion, 2 tbsp parsley, capers, and chickpeas with 4 tbsp olive oil, 2 tbsp apple cider vinegar, salt, and pepper; let rest for 20 minutes.

    Wash tomatoes, halve, core, and dice small.

    Lay sardine fillets on top of basil, tomato cubes, and mozzarella; roll tightly. Secure with a toothpick. Season with salt and pepper. Heat 3 tbsp oil in a pan and brown the rolls all sides until golden brown. Drain excess oil on kitchen paper. Plate the rolls with the avocado-chickpea salad and serve immediately.
