Ingredients
- 1 Zucchini
- 1 tbsp Rapeseed Oil
- 6 slices smoked salmon
- 1 tbsp Lemon Juice
- 1 tbsp Crème fraîche
- 2 tsp horseradish (from jar)
- Salt
- Pepper (freshly ground)
- 6 Spring Onions
- 2 tbsp parsley
- 6 pumpernickel crackers
- 6 toothpicks (for securing)
Instructions

Wash and trim the zucchini, then cut into 12 slices. Heat oil and fry the zucchini slices on both sides until golden yellow. Drain on kitchen paper and let cool.

Drizzle smoked salmon with lemon juice. Mix crème fraîche with horseradish, salt, pepper, and parsley. Spread the mixture onto the salmon slices and fold them into packets.

Trim spring onions, cutting the white part to about 8 cm. Skewer one spring onion piece, one zucchini slice, one salmon packet, and another zucchini slice on each toothpick. Serve with pumpernickel crackers.
