Salmon Wraps with Herb Sauce

- 1 bunch spring onions
- 2 tbsp freshly chopped oregano leaves
- 200 g Cream cheese
- Salt
- pepper (ground)
- 200 g salsa verde (1 can)
- 2 tbsp freshly chopped coriander greens
- 600 g salmon fillet (skinless, boneless)
- 1 red chili pepper
- 4 tbsp oil
- 8 wheat tortillas
- 400 g kidney beans (1 small can)
- 0.5 tsp ground cumin

Clean and wash spring onions; slice white and light green parts into thin rings. Mix cream cheese with spring onions and oregano, season with salt and pepper. Stir coriander greens into salsa verde.

Cut salmon into ~2 cm cubes. Deseed and finely chop chili pepper.

Heat oil in a pan. Cook chili and salmon gently for 3-4 minutes, turning carefully. Remove and keep warm. Warm tortillas. Heat drained beans in the same pan, season with cumin, salt, and pepper. Spread 2 tbsp cream cheese on each tortilla, top with 2 tbsp beans and salmon, fold into pockets, secure with toothpicks. Garnish open side with salsa verde and coriander, serve immediately.
