Ingredients

  • 3 red onions
  • 1 kg small potatoes
  • 2 tbsp butter
  • 1 tbsp harissa
  • 2 tbsp Rapeseed oil
  • Salt
  • Pepper
  • 4 salmon fillets (with skin)

Instructions

    Peel the onion and cut into strips. Peel the potatoes and halve them. Melt butter in a pan and sauté the onions over medium heat until translucent. Then transfer to a baking dish and mix with harissa.

    Heat oil in the pan and fry the potatoes over medium heat for about 5 minutes. Spread over the onions and season with salt and pepper.

    Bake the potato mixture in a preheated oven at 200 °C (180 °C fan) for 10 minutes. Add 50 ml water and bake another 5 minutes. Lightly salt the salmon, place skin-side up on the potatoes, and bake everything together for about 10–15 minutes until cooked through.
