Ingredients
- 50 g Wild garlic (1 bunch)
- 1 tbsp Olive Oil
- 40 g parmesan cheese (1 piece; 35% fat in cream)
- 1 egg
- 15 g butter (1 tbsp; room temperature)
- 20 g whole wheat breadcrumbs (2 tbsp)
- Salt
- Pepper
- 600 g salmon fillet (4 fillets)

Wash and dry the wild garlic, then blend with olive oil. Grate the parmesan finely. Separate the egg yolk from the white (use the white elsewhere). Mix the yolk, butter, parmesan, wild‑garlic oil, and breadcrumbs into a spreadable paste; season with salt and pepper.

Pat the salmon fillets dry, place them on a baking sheet lined with parchment paper. Brush the fillets with the wild‑garlic paste and press it in firmly. Bake in a preheated oven at 200 °C (180 °C fan or gas level 3) for 15 minutes.
