Onion Steak

Ingredients
- 2 slices of entrecote steak (200 g each)
- 4 slices of toast bread
- 2 onions
- 2 slices of pineapple with a bit of juice (canned)
- 6 tbsp oil
- 100 g grated Gouda cheese
- 4 tbsp heavy cream
- 1 tsp butter
- Salt
- pepper (ground)
- Cayenne pepper
- 20 ml cognac
Instructions

Peel, halve and cut the onions into strips.

Cut the pineapple into pieces.

Slowly brown the onion strips in 3 tbsp hot oil until golden brown.

Melt cheese with cream, butter and 2 tbsp pineapple juice in a small pot. Season with cayenne pepper and stir in pineapple pieces.

Toast the bread slices and cut them diagonally. Place the cheese mixture on top of the toasted halves and bake under a preheated grill for about 5 minutes until golden brown.

Season the steak with salt and pepper and sear it in the remaining oil, about 3–5 minutes per side (to taste). Plate on bowls with cheese cubes. Deglaze the pan with cognac. Distribute onions over the steak and drizzle with the pan sauce before serving.
