Ingredients
- 4 salmon fillets (200 g each)
- 20 g clarified butter
- 300 ml fish stock
- 50 ml white wine
- 3 tbsp wormwood
- 150 g room‑temperature butter
- Salt
- Pepper
- 1 pinch mustard powder
- lemon slice
- juice of one lemon
- capers
Instructions

Wash the salmon, pat dry, drizzle with lemon juice and season with salt and pepper. Let rest for 10 minutes.

Bring fish stock with white wine and wormwood to a boil. Reduce over high heat for about 15 minutes until it thins to ~100 ml. Stir in butter with a whisk. Season sauce with salt, pepper and mustard powder.

Heat clarified butter in a pan and sear salmon fillets on both sides until golden brown.

Drizzle salmon with the sauce and serve garnished with lemon wedges and capers.
