Salmon with Carrots and Wild Garlic Oil

Ingredients
- 700 g waxy potatoes
- 500 g carrots
- 600 g wild salmon
- Zitronensaft
- 1 EL melted butter
- Salz
- Pfeffer (from the mill)
- Olivenöl (for brushing)
- muskat (freshly grated)
- 2 EL plant oil (for frying)
- 200 g wild garlic
- 100 ml olive oil

Preheat the steamer to 100°C.

For the potato röstis, peel and wash the potatoes, then steam them in a basket for about 8 minutes.

Meanwhile, peel the carrots and cut into fine sticks. Wash the salmon, pat dry, and drizzle with lemon juice.

Remove the potatoes and let cool.

Mix the carrots with butter, salt, and pepper, then steam for 10 minutes. After about 3 minutes, season the fish, brush with olive oil, place on top of the carrot mix, and continue steaming.

Grate the potatoes, season with salt, pepper, and nutmeg, then form small mounds in a pan with hot oil. Flatten slightly and fry until golden brown. Drain on kitchen paper.

Wash and dry the wild garlic, blend with olive oil in a mixer until smooth. Season with salt, pepper, and a splash of lemon juice.

Divide the salmon roughly and arrange on preheated plates with carrot mix and röstis. Drizzle with wild garlic oil before serving.
