Salmon with Vegetables

Ingredients
- 800 g new potatoes
- Salt
- 1 Shallot
- 1 Garlic clove
- 1 EL Butter
- 200 ml vegetable broth
- 200 ml heavy cream
- 1 handful watercress
- pepper (ground)
- 1 splash Lemon juice
- 750 g salmon fillet
- 200 ml dry white wine
- 1 bay leaf
- 1 tsp allspice berries
- 1 broccoli (ca. 500 g)

Wash and brush the potatoes thoroughly, then boil in salted water for about 20 minutes.

Peel and finely dice the shallot and garlic. Sauté together in a pot with hot butter until translucent. Deglaze with broth and cream, simmer gently for about 10 minutes to thicken slightly. Rinse, dry, and roughly chop the watercress; add to the sauce and blend until smooth. Adjust thickness with more broth if needed. Season with salt, pepper, and a splash of lemon juice.

Bring about 750 ml water with wine, bay leaf, and allspice to a boil in a wide pot. Add the salmon fillets and poach gently for about 8 minutes at low heat until just cooked through.

Wash, trim, and cut broccoli into florets. Steam over boiling water for about 5 minutes until firm yet tender. Drain the salmon well and arrange on four plates. Drizzle with sauce and serve alongside potatoes and broccoli.
