Salmon Cutlet with Herb Crust

Ingredients
- 4 salmon cutlets (180-200 g each)
- Salt
- black pepper (freshly ground)
- 2 tbsp Vegetable oil
- 1 Garlic clove
- 1 sprig parsley
- 1 sprig basil
- 2 chives
- 1 sprig dill
- 125 g butter
- 0.5 tsp lemon zest
- 1 tbsp freshly grated Parmesan cheese
- 80 g breadcrumbs
- 1 untreated lemon (cut into wedges)
Instructions

Wash the salmon cutlets, pat dry and season with salt and pepper. In a pan with hot oil sear all sides until golden, remove and place on parchment-lined baking sheet.

Preheat the oven grill. Peel the garlic. Wash the herbs, shake off excess water and finely chop the leaves.

In a pan melt the butter, squeeze in the garlic, sauté until translucent, then stir in the herbs, lemon zest, Parmesan, and breadcrumbs. Season with salt and pepper. Spread this mixture over the cutlets and place under the hot oven grill to gratinate until golden brown. Remove and serve on warmed plates garnished with lemon wedges.
