Salmon with Grilled Bread

Ingredients
- 800 g salmon fillet
- Sea salt
- pepper (coarsely ground)
- 400 g Tomatoes
- 2 limes
- 4 sprigs basil
- 1 tbsp Olive Oil
- 1 baguette
- oil
- 4 cloves garlic

Divide the salmon fillet into 4 pieces and season with salt and pepper.

Briefly blanch the tomatoes, cool them, peel, quarter, seed, and dice. Wash the limes hot, squeeze 1½, cut the other half into very thin small wedges.

Wash the basil, set aside 4 leaves for garnish, chop the rest. Mix tomatoes with lime and basil, spread over salmon pieces. Brush a sheet of foil with oil, place fish on it, fold and seal edges well. Cook fish for about 10 minutes on a hot grill or 15 minutes in an oven at 240 °C, turning midway.

Slice the baguette thinly, skewer. Peel garlic, blend three cloves with oil and spread on baguette slices. Slice one clove thinly, distribute over bread. Grill until golden brown.

Plate the fish, drizzle with lime juice, garnish with basil. Serve with hot bread skewers.

Optionally add a tomato-cucumber salad.
